Cinnamon Muffins with Coconut Streusel

These muffins are a perfect mix of that delicious cinnamon coffee cake and the lightness of a muffin! The crunch from the coconut streusel makes this recipe elevated from a simple a cinnamon muffin to a coffee shop favorite. I hope you make them!

Cinnamon Muffins with Coconut Streusel
Ingredients:
1/4 cup butter (melted)
1/3 cup of pure maple syrup
2 eggs
2/3 cups of milk
1 tsp vanilla extract
1 tsp salt
2 tsp baking powder
1 TBS cinnamon
2 cups fresh milled soft white wheat
1/2 cup vanilla coconut sugar
Streusel Topping:
1/4 cup melted butter
1/2 cup finely shredded coconut
1/3 cup coconut sugar
Directions:
Preheat oven to 350 degrees. Add all the dry ingredients to a large bowl. Mix together, add all the wet ingredients, butter last.Stir. Launch into your muffin tin. Fill about 1/2 full.
Mix the streusel topping together and spoon or fork on top of each muffin. Bake 12-15 minutes. Makes a perfect dozen.
