Okay, I started to make my Mom's chicken and rice recipe for dinner per Mark's request and had no cream of mushroom soup. I did have mushrooms and some basics and thought I could make my own. LET ME JUST SAY THAT I AM NEVER BUYING CREAM OF MUSHROOM AGAIN! This was so stupid good.
Here are the players!
Cream of Mushroom
Ingredients:
8 oz sliced mushrooms
1/2 diced sweet onion
1 tsp minced garlic
2 tbs butter
1 cup chicken broth
1/4 cup fresh milled soft wheat flour
1/4 cup heavy cream
2 tbs soy sauce
1/2 tsp salt
1/2 tsp pepper
Directions:
Melt the butter in a large skillet on medium high heat. Add the onions, mushrooms, and garlic. Saute and stir until onions are translucent. Add the flour and coat the veggies. Add the chicken stock and stir. Bring to a simmer and continue to stir. Add the heavy cream, soy sauce, salt, and pepper. Once it is thickened. Add it to a blender or food processor and give it a zip to blend the mushrooms and onions into a smoother consistency. Add it to any recipe that calls for it!
This makes a thick cream of mushroom much like the one you buy in the can but SO much better, and so much healthier. This makes a cream of mushroom that is added to other recipes. I used it for my mom's chicken and rice recipe.
If you want to make this like an actual soup, I would add more broth to get it the consistency that you want.
Also just try to resist eating a few spoonfuls.
