Double Chocolate Chip Cookies

Let me start this by saying...YOU NEED THESE! They are paleo friendly, refined sugar free, nut based and soooo stinking yummy! This recipe was actually an accident because I didn't have the ingredients that I needed to make my normal paleo chocolate chip cookies. BUT NO ONE WAS SAD ABOUT IT!

Go whip these up people! You wont regret it!


 

Ingredients:

1/2 cup salted grass-fed butter

3/4 cup coconut sugar

1 egg

2 cups almond meal

1/2 cup raw cacao*

1/2 tsp aluminum-free baking soda

1/4 tsp pink salt

1 cup Lily's stevia sweetened milk chocolate chips

Directions:

Preheat oven to 350 degrees. Cream together butter and coconut sugar, add egg and the rest of the ingredients, adding chocolate chips last. Line baking sheet with parchment paper and pop those babies in the oven. Give them plenty of room because they do flatten out well. Bake for 10-14 minutes. 10 minutes for a more soft cookie, 14 minutes for a firmer cookie but it will still be nice and chewy.

*Note on ingredients- cocoa is not the same as cacao. Cacao is more expensive, but its the real deal if you want the health benefits and high mineral content for more nutrition. Cacao is known for being one of the highest antioxidants, it’s pure, and lots of magnesium. Cocoa doesn’t measure up as well on nutrition because of the heat that it’s exposed to.
