We all know that ancient grains usually have some unique health benefits! Spelt is no exception. Spelt is a unique grain in that it contains large amounts of B17, which has been studied for its anti-carcinoma properties. It has a special carbohydrate that plays a role in blood clotting and is supportive of the immune system. I also love the flavor of spelt! Einkorn has very high antioxidant concentrations which help combat oxidative stress and inflammation in the body! Einkorn is also high in non gluten protein, so its easier to digest for people that are incorporating grains back into their diets!
So the waffles, they are delicious. Cripsy edges, buttery, soft centers, just the perfect waffle. You won't need a different one! This is your new go-to. Yes, I am that confident!
Also if you need a solid waffle maker for a large family. I got this one last Christmas, and I have loved whipping out 4 waffles at a time! Such a game changer in my time commitment!
Fresh Milled Ancient Grain Waffles
makes 12 large waffles
Ingredients:
1 cup unmilled einkorn
1 cup unmilled spelt
1/4 cup coconut sugar
1/4 cup melted butter
2 tsp baking powder
1 tsp salt
2 eggs
2 1/2 c milk
1/3 cup water - 1/2 cup
Directions:
Mill your grain on the finest setting. Add all the wet ingredients into a blender, add the dry ingredients. Blend it together. Let the batter sit 5-10 minutes. I usually turn on my waffle maker to let it preheat while its sitting. This extra time helps the grain hydrate! I pour about
1/2 cup scoop of batter for each waffle. Cook to desired doneness. Serve with pure maple syrup!
