Fresh Milled Sausage Veggie Breakfast Casserole

I'll start by saying that my entire family gobbled this up. We ate it for dinner, and then I reheated it for lunch and a side salad throughout the week. I really enjoyed this dish and think it would be a great make ahead recipe for when you are feeding a lot of people and need a big hearty breakfast. It is very filling! Here is a great savory recipe to add to your fresh milled deck!

Fresh Milled Sausage Veggie Breakfast Casserole
makes 12 servings
Ingredients:
1/2 diced green bell pepper
1/2 diced yellow onion
1 finely diced carrot
1 finely diced celery
4 - kielbasa beef sausage links (precooked), diced
Batter
1 cup unmilled soft wheat grains
1 cup whole milk
1 tbsp arrowroot starch/flour
1/2 tsp salt
6 eggs
1 cup shredded sharp cheddar cheese
3 tbsp butter
Directions:
Preheat the oven to 425 degrees.
Prep all the veggies, or you can buy them all pre-diced if you're in a pinch! Saute the sausage with all vegetables in a large skillet on medium high heat. The fat from the sausage will help cook the veggies. Cook until onions are translucent and veggies are soft.
Mill the grain on the finest setting. Add all the flour, arrowroot, salt, eggs, and milk to a blender. Blend until smooth.
Melt the butter in a heavy 9x13 pan. Pour the batter into the pan. Layer the shredded cheese on next. Add the sausage and veggie mixture on top of the cheese. Evenly distribute everything.
Bake 16-18 minutes or until it doesn't jiggle when you give the pan a little wiggle.
