I made these and had dreams of splitting them in half and dropping them into small mason jars with icing or ice cream in between for parties or desserts this summer. They are delicious and so special. They are not overly sweet, but are such an awesome treat. IF you make your kid's birthday cakes, keep this recipe on your short list! It is clean, made with wholesome ingredients, and so simple! I whipped these up in less that 30 minutes.
Funfetti Muffins
Ingredients:
1/4 cup unsalted butter melted
1/3 cup of pure maple syrup
2 eggs
2/3 cups of milk
1 tsp vanilla extract
1 tsp almond extract
1 tsp salt
2 tsp baking powder
2 TBS natural rainbow sprinkles
1 3/4 cups fresh milled soft white wheat
1/2 cup vanilla coconut sugar
1 white chocolate candy bar
Directions:
Preheat oven to 350 degrees. Add all the dry ingredients to a large bowl. Mix together, add all the wet ingredients, butter last. Add Sprinkles.Stir. Launch into your muffin tin. Fill about 1/2 full. Top with chopped white chocolate, and more sprinkles if your heart compels you to it. Bake 12-15 minutes. Makes a perfect dozen.
Is the vanilla coconut sugar a part of the dry ingredients? Can it be subbed for another type of sugar?
