Green Chili Bacon Pizza


I have made this pizza with chicken, when I have had left over chicken or rotisserie and that is very good. But we agreed that the bacon is better. So you can have some flexibility here. They are both delicious! Once you make your own Alfredo sauce, you will never go back. I haven't bought a jar of Alfredo sauce that was already made since college, over 10 years ago. It is that easy to make, and tastes so much better. You can go ahead and double that Alfredo recipe for some tortellini or fettuccine for dinner on Sunday!




 

Green Chili Bacon Pizza


Ingredients:

shredded mozarella

shredded or thin sliced provolone

1- 4 oz can of green chilies

2 slices of cooked bacon

alfredo sauce


Easy Alfredo Sauce:

1/2 pint of heavy cream

4 oz of fresh grated parmesan cheese

1 tsp minced garlic

2 tbs butter



Directions:

Make pizza dough according to instructions. You only use one of the four pizza doughs for this pizza. Make the Alfredo sauce my melting butter on low to medium heat in a small saucepan. Add the minced garlic and let it cook a few minutes and stir with a spoon. Add the cream, and let the cream warm up slowly. You don't want to scald the cream, so low and slow and is the name of the game. Finely grate the parmesan in to the cream and stir with a whisk until it is melted. Once it is melted, pour it into a glass jar and pop into the fridge to firm up a bit. I like a colder Alfredo sauce when spreading it onto pizzas--just a personal preference. While it is chilling, this is a good time to make the bacon.


Preheat your oven to 425, and put pizza stones or cast iron pizza skillet in the oven to get hot.


Stretch your pizza dough out and put it on your hot stone or cast iron. Spread Alfredo sauce on the dough as your base. I like to use between 3-4 tbs. Top with mozzarella, provolone, about half the can of green chilies. Dice and top the pizza with the bacon. Bake on 425 degrees for about 10 minutes.


Slice up and enjoy!!

p.s. any left over Alfredo sauce...save it and make some fettuccine noodles for dinner the next day! Treat yourself to some delicious Italian!

p.s. If I make bacon at all in a week, I make sure to reserve 2 slices for this pizza on Friday. It will save you some time!
