Heart of Texas Salad & Celery Seed Vinaigrette

This is called the heart of Texas salad because I had it in Boerne at this restaurant and knew I had to recreate it because it was so delicious. It was called " The Heart of Boerne Salad", and a friend of mine went to order it and told the waitress she wanted the heart of Lubbock salad. We have a neighborhood in Lubbock called the Heart of Lubbock so it just rolled off the tongue. So just to keep the trend going...this salad is dubbed The Heart of Texas Salad and you will love it. Slice you a piece of fresh milled bread on the side or make some fresh milled croutons, and you have it all!





 


Heart of Texas Salad & Celery Seed Vinaigrette


Ingredients:

Spring Mix

Butter Lettuce

Dried Cranberries

Pecan pieces

Shallots

Blue Cheese

Bacon Crumbles

Cooked Diced Chicken


Celery Seed Vinaigrette

1/2 cup pure maple syrup

1/4 cup apple cider vinegar

1/2 -1 cup olive oil

1 tsp salt

1 tsp celery seed

1 tsp ground mustard

1 tsp paprika

1/2 tsp onion powder


Directions:

There aren't measurements for the salad because this is a fully customizable situation. If I was making this salad for myself I would fill the plate with the greens, and add like 2 tbsp cranberries, pecans, blue cheese, and 1 tbsp of bacon crumbles. Make your own bacon crumbles for an elevated bite. And I would do like 4 ounces of chicken.

If I was making this salad for a huge gathering, I would obviously add much more of the ingredients to the bowl and dress it right before serving!


The dressing is easy, you just add the ingredients to a jar and whisk to combine. It is good to sit on your counter for up to 5 days! Although I doubt it will last you that long!
