Can I start with saying I love pancakes, and I love sausage. I also love when cheese is added to sweet things to just twist up that savory party. This is what this muffin is. Lightly Sweet, savory, and truly just wonderful. Another breakfast win because it really tastes like a pancake with a sausage and cheese center. Who wouldn't like that?
Honey Sausage Cheddar Muffins
Ingredients:
Breakfast sausage ( 6 oz)
3 oz grated sharp cheddar cheese (I liked Kerrygold Dubliner)
1/2 stick of butter (4 Tbs)
1/2 cup honey
3/4 cup milk
2 eggs
1/4 tsp salt
2 tsp baking powder
1 1/2 cups fresh milled soft white wheat flour
Directions:
Brown sausage in a skillet, breaking apart into small pieces until cooked. Pour sausage onto a large plate with a paper towel underneath to strain the excess fat off.
Preheat oven to 350 degrees. Mill the flour. In a large mixing bowl, add the milk, eggs, and honey and mix together first. Add the flour, salt, baking powder. Lastly, melt the butter and add it last.
In a muffin tin, spray with cooking spray to prevent sticking. If you have a USA muffin pan, just start filling the muffin tins a little over half full. It makes 12 muffins. Take a heaping tablespoon of sausage and put it on top of each muffin. Top with cheese. Bake 12-15 minutes. Pop out and enjoy your life.
My kids may have requested a little maple syrup to dip them in. And I don't blame them lol.
