This recipe has been requested more than a few times! I finally got around to making it happen! This is the only recipe that I have failed at making. And not once...but twice. Ever other recipe has turned out...this one? Nope. Learned some lessons about lemon juice and baking powder on this one. Anyways, I think these are better than the packaged lemon poppyseed muffin mix I grew up on. Like...way better. So let me know if you make them!
Lemon Poppyseed Muffins
Ingredients:
1/4 cup butter melted
1/2 cup of pure maple syrup
2 eggs
2/3 cups of milk
1 tsp vanilla extract
2 tsp lemon extract
zest of one lemon
1 tsp salt
2 tsp baking powder
1 TBS poppy seeds
1 3/4 cups fresh milled soft white wheat
Directions:
Preheat oven to 350 degrees. Add all the dry ingredients to a large bowl. Mix together, add all the wet ingredients, butter last. Stir. Launch into your muffin tin. Fill about 1/2 full. Bake 12-15 minutes. Makes a perfect dozen.
