Allow me to introduce you to ruby chocolate. It is nothing like the chocolate that you know and love. It is fruity, creamy, and has a little tang. I bought a ruby chocolate bar out of curiosity years ago while studying the chocolate aisle at natural grocers. Every now and then I get a hankering for it. Did I mention that its pink? And last week it hit me again. Lemon is the perfect pairing for this muffin. This one definitely rings closer to a dessert. I love the idea of making these for mason jar cupcakes this summer! But I think a super rich icing will be too much. These are calling to a homemade whipped cream between them.
Lemon Ruby Chocolate Muffins
Ingredients: 1 3/4 cup fresh milled soft wheat flour
2 tsp baking powder
1 tsp salt
1/4 cup coconut sugar
1/3 cup pure maple syrup
1 tsp lemon extract
1 tsp vanilla extract
2 eggs
2/3 cups milk
1/4 cup melted butter
1 bar of Ruby Chocolate
Directions: Preheat oven to 350 degrees. Add all the dry ingredients to a large bowl. Mix together, add all the wet ingredients, butter last. Stir. Launch into your muffin tin. Fill about 1/2 to 2/3 full. Chop the Ruby Chocolate bar. Sprinkle 3/4 of the bar on top of the muffins. Bake 12-15 minutes. Makes a perfect dozen.
