This recipe is straight from my childhood. My mom made this soup my whole life. Its classic. Its tex-mex. Its easy. Its quick. It feeds a lot of people. You can warm up some tortillas, makes some fresh, or a make a big pile of cheese quesadillas to dip into that delicious bowl of Mexican goodness. My favorite toppings are cheese, sour cream, avocado, and some fresh cilantro.

Mama's Taco Soup
Ingredients:
1 yellow onion diced
1 TBS minced garlic
1 oz taco seasoning packet
2 tbs ranch seasoning
2 tBS chili powder
2 cans pinto beans
1 can diced tomato and green chilies
1 can hominy
16 oz corn ( I used frozen, but can use canned)
1 can great northern
4 lbs ground beef
1 carton beef bone broth
2 tsp salt
Optional Toppings:
sour cream
avocado
shredded cheese
cilantro
Directions:
Dice the onion and mince the garlic. Brown the beef in a large pot with the onions and garlic. once browned, add all the seasonings. Pour the liquid off of the canned beans and hominy and dump them into the pot. Add all the remaining ingredients to the pot and let it simmer for 20 minutes on medium heat.
Spoon into a bowl and top with your favorite digs.
