Peach season is here!
These muffins are so delicious on their own. But if you're feeling extra or hosting a dinner...DESSERT! These are the perfect single serve dessert that begs for a scoop of vanilla ice cream. If you are serving these as a breakfast or brunch, some homemade whipped cream (or whooped cream, as a few of my favorite kids like to say) would be perfect. You can also just eat them with a side of yogurt.
Peach Cobbler Muffins
Ingredients:
1/4 cup of unsalted butter
1 cup diced fresh peaches (About 2 small peaches)
1/2 cup honey
1/2 cup milk
2 eggs
1 3/4 cups of flour (fresh ground soft white wheat)
2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 tsp vanilla
Optional Topping:
2 tbs melted unsalted butter
1/4 cup flour
1/4 cup coconut sugar
1/4 tsp salt
Directions:
Preheat oven to 350 degrees. Melt the butter. Add all the dry ingredients to the bowl and mix. Add all the wet ingredients and mix together. Add the butter and peaches last.
Sprinkle topping on top!
Fill each tin half way. Bake for 12-15 minutes. Keep an eye on them and insert a toothpick and when It comes out clean, they are ready. Makes a perfect Dozen.
These are delicious!! I don't think I got the right quantities of flour after I milled it - I think it was too airy. Next time you make it will you put in the comments what the weight measurement is for the flour? I ended up cooking them a lot longer until the tops were baked through and they turned out great! My 4 year old and my husband agree!! Thank you!
