OKAY, these muffins are amazing. And they aren't too sweet. They are PERFECTION. The creaminess from the yogurt, the almond extract, the pineapple and coconut...INCREDIBLE. These are definitely one my favorite muffins that I have created so far.
Piña Colada Muffins
Ingredients:
1/4 cup (4 tbs) of unsalted butter melted
1/2 cup crushed pineapple (I used canned)
1/2 cup honey
1/2 cup milk
1/4 cup vanilla bean yogurt
2 eggs
1 1/2 cups of flour (fresh ground soft white wheat)
2 tsp baking powder
1 tsp salt
1/2 tsp almond extract
1 tsp vanilla
Struesel Topping:
1/2 cup crushed pineapple
1 cup coconut flakes unsweetened
1/4 cup coconut sugar
2 tbs melted butter
pinch of salt
Directions:
Preheat oven 350 degrees. Add all the dry ingredients to a large bowl. Add the wet ingredients, pineapple and melted butter last. Mix together. Scoop into the muffin pan. This is still my favorite pan ever. Mix your streusel topping into a small bowl and scoop it on top of the muffin batter. Bake 12-15 minutes. Makes perfect dozen!!
