Pistachio Miso Peach Pizza

Pistachio and white miso... I'm telling you this combination is heaven. It resembles a pesto in that it has nuts, basil and olive oil. I traded out the parmesan for miso to get that saltiness. This combination as the base is such a perfect balance of savory, salty, slighty sweet, fresh and hearty at the same time. It brings the FLAVOR! You can easily make 2-3 pizzas with this base. I made one for dinner and made 2 others for the freezer for another day! And for all the people who don't know where to buy mellow white miso, Sprouts, Natural Grocers, HEB, and even Market Street if you're in Texas.

Pistachio Miso Peach Pizza



Pistachio Miso Pesto Ingredients:

1 cup unsalted pistachios

1 tsp minced ginger

1/2 tsp minced garlic

1 tbsp mellow white miso paste

handful of fresh basil

1/4 cup olive oil


Pizza Ingredients:

1 medium ripe yellow or white peach

1/2 sliced shallot

1/4- 1-3 cup pistachio miso pesto

mozzarella

1/4 cup chopped prosciutto

Drizzle of honey


Directions:

Follow directions for pizza dough. This recipe uses one dough ball that is split into three. While the dough is in the first rise, make the pesto and preheat the oven to 450 degrees with stones or cast iron pizza pan in the oven.

Add all the ingredients to the pesto in to a food processor and pulse until it is nicely combined and the nuts are chopped. Slice the peaches and shallots. Dice the proscuitto with a sharp knife.


Stretch out your pizza dough by hand or use a rolling pin. Place the pizza dough onto parchment paper. Begin assembling by sprinkling the pesto all over the dough, add the mozzarella, sliced peaces, and shallot. Slide the parchment onto your pizza stone. Bake 8-10 minutes on the middle rack. Drizzle with honey before you slice up and serve.


**Notes: If you use a different pizza pan, you dont need to preheat it with the oven, and you dont have to use parchment paper to transfer the pizza on the pan. If you use a stone or cast iron, I find that assembling on parchment is helpful in transfering the pizza over to the hot pan when I am baking in my oven.
