This recipe legit feeds a small army. I love tortellini so much. I love tomato based soups. I love vegetables.I love a good hearty soup. I love a lot of things. And I love feeding a lot of people without cooking all day and the more simple, the better. I hope you try it!
Also, I love lamp.
Ingredients:
4 cups diced carrots
2 cups diced celery
1 large diced sweet onion
5 cloves minced garlic or 1 TBS
4 cups diced mushrooms
1 pound Italian sausage
2 quarts chicken bone broth
1/2 cup heavy cream
1 can diced tomatoes
16 ounces favorite pasta sauce
1 scant tbs oregano
1 heaping tbs basil
2 bay leaves
1 tbs salt
1.5 pounds tortellini
Parmesan cheese (optional topping)
Directions:
Chop all of the veggies. The smaller, the quicker they cook. I have a chopper that makes this super quick and easy. I’ll link here.
In a large pot, cook the Italian sausage with the onions until browned. Add everything but the tortellini.
Bring to a boil. And simmer until the veggies are soft, 20-30 minutes. Add the tortellini and let them cook for 5 minutes. Serve it up! Sprinkle some parmesan cheese on top of that delicious bowl!
Feed your small army, or pack some up and take to another family!
